Three Berry Crepe

1/2 cup blackberries
1/2 cup blueberries
1/2 cup strawberries
1/2 cup apple cider
1 tablespoon corn starch
1/4 cup sugar
1/2 teaspoon vanilla
6 crepes
Combine the cider, sugar, vanilla and cornstarch in a sauce pan. Stir and heat to a boil. When the mixture is boiling it will thicken. Remove from the heat. Add the berries.
To serve, lay a crepe on the plate, browned side down, ladle 1/3 cup of the berry filling across the center of the crepe and fold the edges over the filling. Top with an appropriate sauce.
