Black Bean Vegetable Wrap
The Hills Health Ranch

  • Vegetable spray
  • 2 cloves garlic, minced
  • 1 cup red pepper, diced
  • 1 cup yellow pepper, diced
  • 1 cup zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 red onion, diced
  • 1 7/8 cups black beans, cooked
  • 2tsp. Cumin
  • ½ cup Monterey Jack cheese, grated
  • 4 whole wheat tortilla shells, 9-10"
  1. Heat vegetable spray in pan over medium heat. Add garlic and stir 30 seconds, add remaining vegetables.
  2. Place black beans and cumin in large bowl, mash slightly with fork. Mix into vegetables & sauté until tender, 5 to 7 minutes. Sprinkle cheese and cilantro on whole wheat tortilla.
  3. Spoon ¼ of filling down the center of tortilla.
  4. Roll up tortillas enclosing filling. Arrange wraps seam side down on baking sheet.
  5. Cover with foil and bake until fillings are heated through, uncover to brown. Cut in half to serve.
