Black Forest Cake
Puree:
8 oz pitted prunes soaked in 6 tbsp prune juice
Sift:
1 cup coca powder
1 cup Whole wheat pasty flour
1/2 cup brown sugar(or Sucanat)
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Beat together:
prune puree
2/3 cup buttermilk
2 eggs whites
1 tsp vanilla
1/3 cup prune juice(or fruit juice)
Add wet ingredients to dry. Bake in 8 inch cake pan (greased & floured) at
325 degrees for approximately 45 minutes.
Slice cake horizontally into 3 layers and spread cherry jam on each layer.
Top with vanilla cream (plain yogurt, sweetened with vanilla
and honey (or maple syrup). |
