Jasmine Tea Smoked Salmon with Apple and Lime Dressing

Lightly smoking salmon with natural ingredients for a short time gives a
delightful taste and retains all of its nutrients. An apple and lime
dressing provides counterbalancing antioxidants, vitamins and minerals. Toss
this dressing with your favorite green leafy salad herbs and serve with a
piece of aromatic smoked salmon; it is an ideal healthy dish.
Smoked Salmon
10 Salmon Fillets(50 gram per piece)
1/2 cup Brown Cane Sugar
2 cups Jasmine Brown Rice
2 T Dried Jasmine Tea
1 Cinnamon Stick
2 pieces Whole Star Anise
6 pieces Clove
In a big tray, layer jasmine brown rice, brown cane sugar, dried jasmine
tea, cinnamon stick, star anise and clove in order. Place a grid about 1 cm
above the laid ingredients. Lay the salmon on the grid. Cover the tray with
aluminum foil. Put them on the stove, high heat for 10 min or until the
salmon turns a golden brown color.
Vinaigrette (makes approximately 500 ml)
½ cup Soy Sauce
¾ cup Lime Juice
¾ cup Apple Juice Concentrate
½ cup Onion Chopped
1 Granny Smith Apple Peeled Cored and Chopped
1/3 cup Chive Chopped
1 pinch Ground Black Pepper
In a mixing bowl, whisk all ingredients well.
