Fresh Fruit Soup
The Oaks at Ojai
Makes 6 servings, 45 Calories per serving
Ingredients:

1 1/2 cup
mashed fresh fruit (strawberries, peaches, melon, mango, papaya, etc.)

1 1/2 cup
buttermilk
-
honey or
banana as needed
-
fresh mint
and/or pieces of fruit
Preparation:
Combine mashed fruit and buttermilk in a blender and process to liquefy.
Taste soup and sweeten with honey or banana if needed. Remember that this is not a dessert and should not be super sweet.
Serve in pretty glass bowls or sherbets garnished with mint and/or decorative slices of fruit or whole berries. Note:
This soup was developed to be used as a refreshing first course in the summer,
but it also makes a great afternoon pick up. Serve it to your children and tell
them it's a milk shake. Source:
