Turkey Scaloppini
The Oaks at Ojai


Serves 6, 175 Calories per serving

1 Lb. Sliced Raw Turkey Breast
1/3 C. Grated Parmesan Cheese
2 T. Olive Oil
2 Crushed Cloves Garlic
1/2 C. Chicken Stock
1/2 C. Dry Vermouth
1 T. Lemon Juice
Pinch Each Marjoram & Thyme

Sprinkle turkey with cheese and pound with wooden mallet until cheese is absorbed. Turn meat over and repeat. Heat oil and garlic. Cook meat over low heat until just white and then remove and keep warm. Place stock, vermouth, lemon juice and spices in pan turkey was cooked in and simmer 1/2 hour for sauce. Serve scaloppini with sauce spooned over each serving. NOTE: This is also very good without the sauce
