The Oaks at Ojai Chicken a L'Orange Serves 6, 150 calories per serving Ingredients: 1/4 Tsp. Caraway Seed, Crushed 1/4 Tsp. Rosemary 1 C. Orange Juice 1 Tsp. Low Sodium Soy Sauce 1/2 C. Lemon Juice, Fresh 1 T. Orange Rind, Grated 6 Chicken Breast Halves, Boneless And Skinless (4 Oz.) Preparation: Combine all ingredients except chicken in a baking dish for marinade. Place chicken in marinade, cover and refrigerate for 2 to 3 hours, turning from time to time. Cover baking dish and bake for 45 minutes at 350 degrees. To Microwave: Microwave (high) for 10 to 15 minutes. Drain off liquid into a sauce pan and keep chicken warm. Boil liquid to reduce to one quarter volume for sauce. Serve chicken with sauce spooned over to glaze. Note: This looks lovely garnished with fresh Rosemary and Orange slices. If your sauce doesn't seem thick enough to cling to the chicken, thicken it with a little arrowroot. (1/2 T. to 1/2 C. sauce)
