Orange Salad
The Oaks at Ojai

We love this salad in
winter, when Ojai oranges are at their best. Enjoy with a good fat-free
honey mustard dressing.

Ingredients:
2 cups bibb lettuce, washed and torn
1 medium orange, peeled and sliced
1 scallion, chopped
1/4 cup avocado, sliced
1 tbsp. Cashews, toasted
2 tbsp. Fat-free honey mustard dressing
Preparation:
Combine lettuce, orange, scallion and avocado.
Toss with dressing.
Top with toasted cashews.
Serving ideas: double the recipe and have a one-dish meal, or serve as a side
dish.
Note: you can make this without the cashews or avocado to save on fat, but
they add a lot to the taste!
