Red Mountain Spa Pan Seared Chicken Breast with Fresh Fruit Salsa, Served on a Bed of Mixed Greens from Red Mountain Spa Executive Chef Jeff Crosland Servings: 1 Serving Size: 1 4oz breast Ingredients 1/4 t Olive Oil 4 oz (1 breast) Chicken Breast 1 C Mixed Greans 1/2 C Fruit Salsa (see note below to make your own) Directions • Preheat the oven to 400 o. • Add the olive oil to a hot, oven-safe skillet. • Sear the chicken breast for 1 to 1 ½ minutes on each side. • Place the skillet (with the chicken breast) in the preheated oven. • For each inch of thickness, cook 10 minutes. • Slice the chicken breast (on a bias) into ¼ inch slices. • Serve on the bed of mixed greens. • Top with the fruit salsa. Note: Some supermarkets are beginning to carry lines of fruit salsa. To make your own, mix equal parts of your favorite chopped fruit (or mixed fruit), jicama, and onion. Add chopped cilantro and dashes of salt, pepper, and lemon peel. Add chopped jalapeno or other hot pepper if you wish.
