Herbed Polenta Torte
New Age Health Spa
Serves 4, 174 calories per serving

Ingredients:

  • 1 1/4 cup Yellow Cornmeal
  • 1/2 cup Red Pepper, chopped
  • ¼ cup fresh parsley, chopped
  • 1 tsp. Dried Oregano
  • 3/4 tsp. Salt
  • 1/2 tsp. Dried Basil
  • ¼ tsp. Black Pepper
  • 4 cup Water
  • ¼ cup Parmesan Cheese, freshly grated
  • Cooking Spray

Instructions:

  1. Combine first seven ingredients in a large saucepan. Gradually add water, stirring constantly with a whisk.
  2. Bring cornmeal mixture to boil and reduce heat to medium.
  3. Cook polenta 15 minutes, stirring frequently. Stir in Parmesan cheese.
  4. Spoon polenta into a 10” springform pan coated with cooking spray, spread evenly.
  5. Let polenta cool completely until firm, about 2 hrs. refrigerated.
  6. Place pan on baking sheet.
  7. Bake uncovered at 350 degrees for 1 hour or until set.
  8. Let cool on a wire rack for 10 minutes. Chill 2 hours or until set.
  9. Cut into wedges and serve.
