Polenta Torte

Serves 4, 174 calories per serving
Ingredients:
- 1 1/4 cup Yellow Cornmeal
- 1/2 cup Red Pepper, chopped
- ¼ cup fresh parsley, chopped
- 1 tsp. Dried Oregano
- 3/4 tsp. Salt
- 1/2 tsp. Dried Basil
- ¼ tsp. Black Pepper
- 4 cup Water
- ¼ cup Parmesan Cheese, freshly grated
- Cooking Spray
Instructions:
- Combine first seven ingredients in a
large saucepan. Gradually add water, stirring constantly with a whisk.
- Bring cornmeal mixture to boil and
reduce heat to medium.
- Cook polenta 15 minutes, stirring
frequently. Stir in Parmesan cheese.
- Spoon polenta into a 10” springform
pan coated with cooking spray, spread evenly.
- Let polenta cool completely until firm,
about 2 hrs. refrigerated.
- Place pan on baking sheet.
- Bake uncovered at 350 degrees for 1 hour
or until set.
- Let cool on a wire rack for 10 minutes.
Chill 2 hours or until set.
- Cut into wedges and serve.
