Cauliflower Mousse

Cauliflower, Raw 1 quart
Neufchatel Cheese 6 oz
Egg Whites 3 whites

Cut the cauliflower into small pieces and steam until firm to the bite. In a food processor combine the egg whites and cream cheese and blend till smooth. When the cauliflower is finished, add it immediately to the food processor and puree until it looks like mashed potatoes.

Note - The cauliflower must remain hot, making sure it cooks the egg.
