Baked Sweet Potato Salad With Cilantro and Green Onions

Ingredients

2½ lbs Sweet potato, baked soft, peeled and cubed
1 pepper Red bell pepper
1 C Celery, chopped
1 pepper Jalapeno, seeded and minced
1 C Yogurt, plain / nonfat
3 T Cilatro, minced
2 t Scallions, sliced
pinch Salt

Yield: 10 C
Servings: 20
Serving Size: ½ C

Directions
• Mix the sweet potato, red bell pepper, celery and jalapeno.
• Combine remaining ingredients and add the sweet potato to the mixture.
