Wild Rice Salad

Serves 6
Calories: 107 per serving
  • 2 tbsp wild rice, raw
  • 1 cup hot water
  • 1/3 cup long grain brown rice, raw
  • 1 ½ cup broccoli, chopped
  • 1 ½ cup cauliflower, chopped
  • 1 ¼ cup carrots, grated
  • ½ cup celery, diced
  • 2 tsp sweet soy sauce
  • 1 tbsp sesame oil
  • 1 tsp soy sauce
  • ¼ cup snow pea flowers
  1. In a saucepan with tight lid, soak wild rice in ½ cup hot water for 30 minutes. Add brown rice and the rest of the water. Bring to boil, lower to simmer and cook for about 30 minutes, or until rice is tender.
  2. Blanch the broccoli and cauliflower in boiling water for about two minutes.
  3. Combine the cooked grains, prepared vegetables and mix well [except for snow pea flowers].
  4. In a small bowl, combine the soy sauces and sesame oil.
  5. Add this sauce to the rice and vegetable mixture, mix until well blended. Garnish with snow pea flowers.
